🌱Edamame, pea, Meredith Goats Cheese & mint salad🌱

This is an amazing salad. Serve it up with almost anything and its crazy easy to throw together. Lovely served with slow roasted sweet potatoes & avo.

1 cup of frozen peas

1 cup of frozen edamame (shelled)

1 - 2 cubes of Meredith Goats Cheese

1 teaspoon of Meredith Goats Cheese oil

A handful of mint chopped fine

A handful of chives chopped fine

2 cups of rocket

Method

Simply pour boiling water over the frozen peas and beans, leave for 3 mins until they defrost, strain and throw into a bowl.
Add in everything else - breaking up the cheese with your fingers, toss well and serve!
How goods that!!!!
This salad needs no dressing as the oil, cheese & mint add all the flavor you need!

Potatoes in the slow cooker

For the potatoes, simply wash them whole, prick a few holes in each with a fork, cover with oil, salt & pepper, chopped up garlic & a smidge of lemon rind. Wrap them in foil and place into a slow cooker on low for 5 - 6 hours.
These are so good and you can make them in the morning before work so they are ready when you get home.
