Fermented garlic greatness

Fermented Garlic Greatness πŸ§„πŸ―

I am absolutely obsessed with this garlic potion! It’s sublime β€” and Frankie loves it so much I caught her this morning, perched on her step with a spoon in the jar, eating it like a cheeky little honey bear. πŸ»πŸ’›

This recipe is beautifully simple β€” and the results? Incredible.

When you mix raw honey (the runny kind, not creamed) with garlic and leave it at room temperature, it ferments into an amazing source of vitamins and good bacteria. Both the honey and the garlic become powerhouse foods for gut health and immunity β€” perfect for Autumn and Winter.

πŸ’• Recipe πŸ’•

  1. Place individual garlic cloves into a clean jar.

    • I usually peel them, but you can skip this step if you can’t be bothered.

  2. Cover with raw honey (important! Pasteurised honey won’t ferment properly).

  3. Stir well to remove any air pockets.

  4. Leave the jar uncovered on the bench for a few days, mixing daily.

  5. Once you see a froth of bubbles at the top, seal the jar and store it in a cool, dark place.

πŸ’• Notes & Tips πŸ’•

  • It will keep for months and months if sealed properly.

  • No fancy sealing needed β€” I just reuse a Meredith Cheese jar, pop the lid on once the bubbles begin, and into the cupboard it goes.

  • Over time, the garlic cloves will turn a deep brown β€” totally normal.

  • Once the honey’s gone, keep the cloves in the jar and use them in cooking.

πŸ’• How to Use πŸ’•

  • A teaspoon of the honey or one clove a day is a brilliant immune booster.

  • The cloves are also delicious in savoury cooking β€” soups, stir-fries, roasts, you name it. Bonus! πŸ™Œ
